doing and noun can work as a noun. doing is a process. the noun is a fact or result. not all of doing is a process . some doing are facts.

enzyme are process of trying. this meaning is bad. a thing can not be a process. enzyme are attempts. this is good meaning
in combination of words, why this word can be in the combination but the other of OF THE SAME KIND can not be in the combination? this is purely meaning logic problem which you can solve , using your common sense of this world.
i can not say :my hobby is to read english. because "to read" is a intended future action can not be a hobby, which exists now.
so enzymes can not be trying.
