Celiac disease results from an inability of the digestive tract, specifically the small intestine,
to absorb gluten, a protein found in wheat, barley, and certain other grains. The body's immune system attacks the gluten as if the protein were a harmful pathogen, often resulting in serious damage to the intestinal lining. People who suffer from celiac disease must eliminate gluten from their diets. Symptoms of the disease include abdominal cramps, bloating, and anemia.

If the statements above are true, which of the following assertions can be made on the basis of them?
A) Anyone who suffers from celiac disease will experience anemia.
b) Eliminating gluten from one's diet will cure celiac disease.
c) People experiencing abdominal cramps, bloating, and anemia have celiac disease.
d) Gluten is found only in grains.
e) The human body cannot always recognize harmless substances.

I would go with E!

Let me explain:

Argument: Celiac disease results from inability of body to absorb gluten, resulting in body's immune system attacking gluten, damaging of intestinal lining. People should eliminate gluten from their diet. Symptoms of this disease are cramps, bloating or anaemia.

Now let's go through the choices one by one:

A is not true. People suffering from celiac disease may cut out gluten and hence not experience anaemia. So this is incorrect.
B is not true. Eliminating gluten only avoids the disease, the passage says nothing about curing it.
C is not true. We cannot say that those symptoms only manifest themselves during celiac disease. They may do so for some other disease as well which is not covered in this passage.
D is not an assertion, this is already written in the passage.
E is true. We know from the passage that gluten is a useful substance but because the body cannot absorb it, it attacks it like it is harmful. So the assertion that the body is not always able to identify harmless substances is true.

Hence E!
