Although the turtle has been toothless for more than 150 million years, in some contemporary turtle species the moderately sharp and jagged edges of their horny jaws function for teeth.
A. their horny jaws function for teeth
B. its horny jaws function for teeth
C. its horny jaws function as do teeth
D the horny jaws function as teeth do
E the horny jaws function as teeth

A B C - pronoun reference is not proper
D - X function as Y is the right idiom

IMO E.

Getting defeated is just a temporary notion, giving it up is what makes it permanent.

A - function for vs function as (E) , I will prefer function as.
B - Plural pronoun -> Its is incorrect.
C - Plural pronoun -> Its is incorrect.
D - no need of 'do'.
E - Correct.

But would like to know more on why C and D are "incorrect"?

Are C and D "incorrect" or not preferred here?

D - X function as Y do - wrong, X function as Y is the right idiom.

C and D are wrong because Jaws function as teeth . If you add "do" , Jaws function as teeth do , what function do jaws or what function do teeth do? Isn't it weird?
