Here's a quick rundown of my profile:

GMAT: 640
Undergrad GPA: 3.7 Overall, 4.0 in Major (Computer Science) at middle-tier school
Work Experience: 12 Years experience, currently VP at Investment Bank/Financial Services

I got into Fordham and Pace part-time, just curious if I could reach NYU's part time program with those stats? From my research, 80% of NYU's GMAT is 640-710 so I just hit the edge on that. Will my work experience / essays / recommendations from coworkers (who are also NYU alumni) be able to pull me over the top?

re-take the GMAT. If you can get 20-40 points higher, you should be a lock for NYU.
