A tough one; i could not identify the head but, i guess, identified the tail :-)

B:
C:Heating....if that would be true....What about non heated? ....
it should have been general statement
D:High official.....what about non-High officials.....Same as C
E: Less effort.....could be
But how do we connect the "more easily removed" and leavening ?

I think the developments the passage is talking about are:

1. Discovery of leavened bread
2. Introduction of Wheat Variety

and we need to show how they are casually related.

Now, I'm not much of a baker so I'm only guessing that even to bake unleavened bread, you would have to bake the flour, ruling B out.

also, the argument says that the Egyptians discovered the Leavened bread when they switched to the Wheat variety. So, we would need to find the reason which would identify, why did the Egyptians switch to the Wheat variety.

and E provides us with that.

Of course, the underlying assumption is that even to make unleavened bread, you'll need to bake it. :)

I would go with A.
I generally use key-word strategy if i dont understand the argument and answer-choice relation . It works for me with 50 % accuracy..
After-all V cant get everything rite in Gmat and time matters. Let me know OA.

IMO C

The question is how thenew type of grain and the leavened bread are related?. We know from Stem that leavened bread discovery is accidental.

C answers it. When they stopped toasting the grain=>gluten is available => leavening bread.

I will go with C.

A = Discovery of leavened bread
B = Discovery of new wheat variety

Arg says that new wheat is preferred because hernel could be removed w/o toasting

Option C says the heating destroys gluten required for yeast.
So not heating in new wheat will not destroy gluten which is required for yeast and hence produce leaven bread.

Hence C

IMO C

the new grains don't require heating .. thus gluten will remain in it.. and if gluten is imp for yeast to leaven bread then... it may be that when new variety was found... leaven bread was discovered...
