Took the GMAT 3 years ago and scored 690. With the next Gen test being released in June, should I apply to bschool with my old score or aim to take the new test? How might schools perceive the old score in the context of the new test launching?

It remains to be seen how much weight schools will place on IR, but as long as your score is valid it will be fine.
