The list of animals that exhibits a preference of either using the right or the left hand (i.e., claw, paw, or foot) has been expanded to include the lower vertebrates.

IMO A.

The list is singular so exhibits is the correct verb(C, D and E ruled out). In B, "has been expanded and includes" seems wrong to me and it also changes the meaning.

My bad.. didn't read properly.

IMO D

Animals - Plural. so exhibit is the correct verb(A and B ruled out).

Between C, D and E - It comes down to idiom - Preference for is the correct idiom.

here subject is not the animals BUT LIST

Ans must be B

am not sure abt IDM but it can't take priority over Subject -Verb basic rule..

D is correct,

"exhibits" in A and B is wrong,should be "exhibit"
"either using the right or the left hand " in C is not parallel
"either using the right or the left hand " in E is not parallel

'the list' doesn't 'exhibit preference' but the animals 'exhibit preference' for using either hand so i think 'exhibit' is correct.
Also i think the correct idiom is 'preference for'.
IMO D is correct.

Let me finish:

1. List can not exhibit preference, so animals that exhibit preference is correct.
=> This rules out A and B.

2. "Either X or Y" is correct, where x and y must be parallel.
=> E and C are out.

=> either using x or using y. is correct idiom.

BUT "either using X or Y" is not correct.

Answer is D.
