n addition to having more protein than wheat does, the protein in rice is higher quality than that in wheat, with more of the amino acids essential to the human diet.

(A) the protein in rice is higher quality than that in
(B) rice has protein of higher quality than that in
(C) the protein in rice is higher in quality than it is in
(D) rice protein is higher in quality than it is in
(E) rice has a protein higher in quality than

The things that should be learned first:

In addition to having X, Y is

It means that Y has X.

Now, match the original sentence. Does the protein itself have more protein? No.
==> Eliminate A, C, and D because these have "protein" in place of Y, meaning that "protein has protein"

Second:

See the following sentences:

My book is better than John. NOT CORRECT because "book has been compared with John".

My book is better than that of John. CORRECT because "book has been compared with the book of John".

That of John = the book of John.

Same deal in case of the option E.

rice has a protein higher in quality than wheat. NOT CORRECT because "protein has been compared with wheat".

Protein of rice should be compared with protein of wheat.

The sentence should be:

The protein of rice is higher in quality than that of wheat.

--> This rule eliminates E.

Answer: B

C. wild animals have less total fat than that of livestock fed on grain and have more fat of a kind thought to be
D. total fat of wild animals is less than livestock fed on grain and they have more fat of a kind thought to be
E. total fat is less in wild animals than that of livestock fed on grain and more of their fat is of a kind they think is

Comparison MUST be parallel:

Comparison can be as follows:

SUB VERB, THAN , SUB.

I have fewer books than John.

SUB VERB THAN SUB VERB.

I have fewer books than John has.

prep than prep

I can work more in the office than at home.

Think what has been compared.

C and D have wrongly compared the fat with animal. Eliminate them.

A and E have used "they" ambiguously. They has more than one antecedents;therefore, "they" is ambiguous.

Answer is B.

Perhaps you could explain what you think is the contradiction? There are nearly infinite ways that sentences can be different, so it might help to be more specific.

The first sentence says "wild animals have less total X, and (of the X they have) have more X of a certain type."

The second one says "rice has X of higher quality than the X in wheat".

The first one is comparing both quantity and type, the second one is comparing only type.
