'that' issue

I am wondering.... is 'that' is necessary or unnecessary after ordered,contend, request, demand ....

e.g. I request that you sit down.
or I request you sit down.

Is it some kind of idiom or any other grammar rule ??? Please enlighten me ...I m confused in these questions ...

In this example I understand so X that Y is IDIOM ...can't we use 'so' alone ...

which used in case of non essential mofifiers
that is used for essential modifiers

besides which defines preceeding noun...
For eg:

I like maple tree, which exhibits different shades of color throughout the year.

but in case of 'that'
Is it used for nouns or clauses or both ??
