It is true that 'Fewer than' is countable noun and 'Less than' an uncountable noun.
But there are some exceptions to this concept...
'Less than' is also used for
(i) sums of money
(ii) periods of time
(iii) distance
(iv) citing numerical or statistical data...
I initially was not aware of this, but later on became aware of this thing...
