For my last prep test

Since GMAT Prep doesn't provide explanations, should I take a MGMAT CAT instead of the last GMAT Prep test? I'm more interested in using the test for studying purposes than for predicting my score since I can't delay the test anyway.

It's still a better idea to use GMATprep, because the questions in the software are closer to the real thing. If you do need explanations, post your questions in the appropriate forum and I'm sure you'll get the answers you need!
