I am confused too..but IMO ans should be C
reason is past perfect is used to describe past of past.Here we do not have another time reference(clearly 'Founded' cannot be treated as time reference as Zoroastrianism cannot influence anything before it is founded. )

Zoroastrianism influenced the three other major western religions

"Had Influenced" is INCORRECT over here; it would mean before Zoroastrianism was founded it had inspired. Hence sequence can't be correct and has to be considered as parallel past events.
It should be "Influenced only"

1) can't use the plural verb " were influencing " for a singular subject.
2)"-ing" form should describe the ongoing activities during a specified period, which took place in the past hence WRONG ☠�
B)
1)The sentence looks like there is no main verb.
. 2)Which is ambiguous
D)
1)Double past not preferred in GMAT
. 2)As the time frame "in the sixth century B.C." is described in the passage hence, the event is bounded. Can't happen before that.
3)Same as B.
E)
1) Double Past not preferred.
2) Same as D(2).
"C" is correct.
