Kaplan Teacher says stop at 640

My Kaplan gmat instructor told our class to just get a 640, and it will give you a good chance at any of the top b-schools.

My instructor is very adamant about his beliefs and firmly verbalized to stop taking the gmat if you hit 640+; however, many adcoms at top-10 b-schools have stated that only 8-10% of their class wrote less than their 80% range, (which is a 680-700+).

Can you please shed some light so that students are not misinformed?
What minimum score do you suggest would give us reasonable consideration at a top-10 b-school?
