I have been told that you can actually skip the essay part of the test and just take the quant and verbal. Is this true? If so, would you recommend it? Why or why not?

It depends on the schools you are applying to. Some schools don't even look at the essay score. They only look at the composite score. I would say the more competitive the school the better the chance is that your essay score will count. Check with the admissions people at your top schools before skipping the essay.
