On the GMAT a list is parallel only when all the items are the same part of speech. The GMAT would consider your list incorrect because 'coffee' and 'tea' are nouns, whereas 'running' is a verbal form.
Although this is not a GMAT style sentence, if we wanted to convey this idea, we would either rewrite the sentence with a new verb: I like coffee and tea, and I also adore running around in circles.
Here you have dismantled the original list and created a new parallel construction: "like and adore".
Another option would be to add verbs to the first two items: "I like sipping coffee, drinking tea, and running in circles.
Another option would be to turn the third item into a noun: "I like coffee, tea, and circular runs" - where 'runs' is a noun.
