Parallelism E is correct. Initially I was looking for the ||ism for either.... or.... However, after very close analysis it is E.

(C) to find and attack prey, for defense, or communication and navigation - Incorrect - not ||el. Communication and navigation are nouns and not ||el with verbs find and attack. to...for... are not ||el
(D) for finding and attacking prey, to defend themselves, or also for communication and navigation - Incorrect - for...to...also are not ||el
(E) to find and attack prey, to defend themselves, or to communicate and navigate - Correct - ||el

The idiom is "either XX, or YY"

In the option E, where is the "either"?

(E) to find and attack prey, to defend themselves, or to communicate and navigate.

=> "Either X, Y, or Z" is the idiom, but where is the "either"?

You have the same confusion, what I had when I looked this question first time. Keep in mind that it is not necessary to have 'either', whenever you see 'or', vice versa. You can have 'either' alone in the sentence or 'or' alone. This sentence talks about the purpose why fish generate and discharge the currents. There are 3 possibilities 'to find and attack prey, to defend themselves, or to communicate and navigate'. There are chances that they are generating and discharging the currents for all three posibilities. However, with either...or...you have only one option and not all. Hope this helps!!!!
