I just finished taking a GMAT Prep practice test and I didn't complete the quantitative section. Surprisingly, my score wasn't as bad as I thought it would be. Does the practice test scale your grade based on how many questions you completed or did I just do really well on the parts that I did complete?

The score would have been much more better if you had completed the test :) It is based on the difficulty level you had reached. If you feel that the score wasn't bad then you had done well. But have in mind its more important to finish the test than to attempt them correctly. Your scaled score drops drastically at the end if you don't complete the section.
