If I don't have any extra-curriculars, do I have to give an explanation on the optional essay? I've spent the last 5 years working full time and earning a master's degree at night. I have some leadership experience at work, but haven't done anything outside of work. Should I highlight my leadership at work? How important is being "well-rounded"?

You have been busy! You should definitely discuss your academic and professional workloads in your essays. Leadership at work is still leadership and should be discussed, as appropriate, in your essays and interviews. Finally, you do want to be a well-rounded applicant. Any hobbies or special interests will be useful in defining yourself to Adcom.
