After a day of relaxation, Paul returned to work.

After a day of relaxation, Paul returned to work.
After a day of relaxing, Paul returned to work.
After a day of relaxation Paul returned to work.
After a day of relaxing Paul returned to work.
After relaxing for a day, Paul returned to work.

For correct comparision, A day of relaxation/relaxing should be followed by "a day of work". In other words, it is incorrect to compare Paul with a day.

So, E is the option which fits this criterion best because it says "After relaxing for a day... This has to be followed by Who... And the answer is Paul."

Also, the comma is essential, to separate the clause from the main sentence. Else, the meaning is not brought out correctly.

So, E is correct.

Using Verb+ing as a noun/adjective replacement when there is an actual noun/adjective is a mistake in the GMAT. Why use a replacement when you have the real thing?

Examples:
Incorrect: The presenting went well.
Correct: The presentation went well.

Incorrect: Jealousy is a destructing quality in a relationship.
Correct: Jealousy is a destructive quality in a relationship.

However, there are two conditions which need to be fulfilled:
1. the sentence must really call for using a noun/adjective
2. a relevant noun/ adjective must exist
