Inconsistent CAT Scores - Higher on Kaplan!

Hello. I wanted to see if anyone had any insight on this particular subject. I recently went through a Kaplan prep course and had access to 8 full length exams. My first few were not up to my standards - ranging from 540-550. Over the last 5 weeks, I was averaging a 580-610 on the Kaplan CAT's. I recently took my first CAT through GMAT Prep and scored a 510. Upon taking that exam, I took another Kaplan test and scored a 625. The most recent - yesterday a second GMAT Prep test and, yet again, I scored very low at 520. I am in utter confusion and wondered if anyone could offer any insight.

I have read in numerous places that Kaplan's tests are a bit harder than the actual exam. In turn, I assumed in getting an average 610 on them I would probably be around a 650 on a more realistic prep test.
