you can master the material and still fail to score 780 on the GMAT. everyone has bad days and your score on any day will likely be within ~30 points of your true score. so, if you're true score is 750, then it isnt an extreme outlier for you to score 780 on any given day.
personally, i think the difference between 700 and 730 (for a well balanced test taker... e.g., 40+ in each section) is strategy (i.e., timing). anything above that (740-800) is pretty equal in my mind, and if you sat each person (who scored 740-800) down on any given day, his/her score would fluctuate within that region.
