Hmmm....interesting question. Extended Stay Hotels is a brand name and is also an adjective phrase, so depending on how it's used, one would be capitalized as a proper noun and the other would not. I guess you just have to be familiar either with this company, or be careful about the context in which it is used.

at least, one should look for words with capitalized letters, e.g. if you write Extended Stay Hotels, then one can recognize that it is kind of a proper noun.

I doubt GMAT will have an answer choice hinged on the usage of proper noun.

But in general, if you see a capitalized noun, chances are it's a proper noun.
