tricky one, love it.
Here that modifies animals and NOT the list.
... that exhibits a preference of either using the right or the left hand .... = list cannot show the preference of using left or right hand, it's the animals.
A & B out.
Among C, D, E = correct idiom is, Either X or Y where X and Y are logically parallel.
Correct answer is D

I would also go with D.............

A & B wrong because of the use of exhibits
C wrong because of the wrong use of "either"
E awkward.........

Two seperate stuff : The list ..... has been expanded to include
and : animals that exhibit : A and B out

Further : In either or construction, the two items should be parallel : Using either x or y and not either using x or y. C out

also, expanded and includes is not a correct construction to introduce a purpose E out.

Left with D as correct IMO

"Preference for" is idiomatic . SO pick D

all comments are worthy and correct as well

but still, i want to emphasize one ques...

why can't a LIST have a PREFERENCE..

may be there is a list have certain other items and including a PREFERENCE a column in the list as well... ?
