By offering friendlier service and a wider variety of cuisines, such as Ethiopian and Vietnamese foods, the new local restaurant has not only taken customers from other restaurants but also forced them to introduce new types of foods to their menus.

has not only taken customers from other restaurants but also forced them

has not only taken customers from other restaurants but it also forced them

has not only taken customers from other restaurants but also forced these restaurants

not only has taken customers from other restaurants but also these restaurants have been forced

not only took customers from other restaurants, but it also has forced them

has not only taken customers from other restaurants but also forced them
>> them may refer to customers or restaurants

has not only taken customers from other restaurants but it also forced them
>> no referent for it

has not only taken customers from other restaurants but also forced these restaurants
>> taken and forced parallel... no pronoun ambiguity

not only has taken customers from other restaurants but also these restaurants have been forced
>> not only X but also Y.. X and Y need to be parallel

not only took customers from other restaurants, but it also has forced them
>> same issue as D and B

We can also go by eliminating B & E, as it violates the idiom "not only.....but also"

From A, C, D.....

Eliminate A for Pronoun ambiguity "them"
Eliminate D for passive voice at the end "have been forced

So C is the final one

has not only taken customers from other restaurants but it also forced them

has not only taken customers from other restaurants but also forced these restaurants

not only has taken customers from other restaurants but also these restaurants have been forced

not only took customers from other restaurants, but it also has forced them
NOT ONLY X ...BUT ALSO Y (X and Y must be parallel)

A - not only taken ..but also forced (PARALLEL); but THEM IS AMBIGUOUS
B - not only taken..but it also forced (NOT PARALLEL; IT present only in Y); THEM IS AMBIGUOUS
D - not only has taken ...but also these restaurants have been forced (NOT PARALLEL; restaurants present only in Y); use of HAVE BEEN FORCED suggests that FORCING IS NOT DONE BY THE NEW LOCAL RESTURANT (different from original meaning)
E - SAME AS D

IMO C

C should be correct as them is replaced by restaruants to avoid ambiguity.

(C) is good as it clearly references the other restaurants.

This is a construction is preferred by GMAT.
