Are intructions interspersed with questions on real GMAT?

I have taken a few exams now including MGMAT, GMATPrep, PowerPrep, 800score and Veritas. In atleast some of them (not sure if all) the instructions were interspersed with the questions. That is, on one test, I saw instructions about SC followed by 3 SC questions. Then I got instructions on CR with 2 CR questions to follow. And finally, instructions on RC ... Is this what happens on the real test too?

It's been a while since I've tried the practice tests that you've mentioned, but the format you should expect on the real test should mirror GMATPrep's format exactly.

In general, don't waste your time reading the instructions--come in with them memorized!

Yep, GMATPrep follows the real format exactly. I haven't done it in a little while but last time I saw it, they put the instructions up the first time you see a problem of a new type. They may change that in future (or maybe they've changed it by now), but that's how it was earlier this year.
