I think C is correct because it tells why potter chose the pseudonym.

Original sentence: WAS SEEKING and CHOSE are two activities - He chose the psudonym while he was seeking anonymity

A/B - use of WHEN suggests Potter was seeking anonymity only when he was chosing psudonym (in other words, use of when implies CHOSE and SEEK happened at the same time)

D - chose is part of prep phrase and therefore suggests that CHOSE and SEEK happened at the same time. Moreover, IMO use of IN THE CHOSING suggests Potter did not have direct involvement in chosing his psudonym (ideal would have been to use IN CHOSING)

E - TO BE suggests FUTURE action (Potter wanted to become anonymous sometime in future)

Only C conveys the origina meaning and also use simple past for CHOSE and past continuous for SOUGHT
