Use of word 'that'

Hi Guys

Can you pls tell me as to when to use the word 'that' and when not to use it in gmat.

for eg we have a sentence like this..

the trenches that were cut into a 500 acre land at Syria, have yielded stron evidence....


now here using that is correct or not????

As per Manhattan SC guide, we should use "that" we want to tell more about the noun preceding the same and that additional information cannot be logically removed....else we want to insert Middlemen...(i.e. that just add words without adding much to sentence)...then we should use "which" etc.
