It varies greatly depending on the individual. Some people take just two practice tests (the GMATPreps) while others take many, many tests. Personally, I had a lot of timing issues so taking many tests was my best study tool for working out timing. You can look through the I Just Beat the GMAT forum to see what others have done.
Also, you mentioned that you plan on finishing the guide books first then taking the CATs. I believe the best route is to take the tests while going through the books so you can measure your progress.
