I think the subject is "mastery". Read it as:
his mastery (of something ...) make him a sought after dinner guest.
Hence I feel "makes" is the right choice.

What I can gather from mayonnai5e's experience is it's best to answer as many questions, especially in the beginning, without random guessing as you possibly can even if it means you will need to randomly guess on some towards the end (to a limit ofcourse).
