I'm not sure the online applications will allow embedded graphics in an essay; that is a good question. My best guess is they do not but it depends on the restrictions/requirements of the upload (i.e., Word doc vs. pdf vs. text box). Admissions committees are looking for you to answer the questions being asked, and while most do not specifically say use words only, they are generally looking for you to write your answer.
It is important to approach your application in the right way. Attempts to be cute or creative can backfire. Personally, I would not use graphics and focus on answering the questions thoroughly. But it is your application and you need to feel it accurately reflects you as a candidate.
