E is right
A is wrong as the growing brain is right(growing is not the verb but present participle modifying noun, brain

B compares mice and canaries but these are not examples of neurogenesis which is a process
C-mice is already plural
D -they is ambigous

Let me add something here ...

Recently documented examples of neurogenesis, the production of new brain cells, include the brain growing in mice when placed in a stimulating environment or neurons increasing in canaries that learn new songs.

A)the brain growing in mice when placed in a stimulating environment or neurons increasing in canaries that ... the use of complex gerund phrase brain growing is parallel to the complex gerund phrase neurons increasing, however if an appropriate action noun for a particular verb already exists in English, then avoid creating a complex gerund phrase. Instead, use pre-existing action noun growthand increase, as the answer E) does. Moreover, the preposition when is not parallel to the relative pronoun that. The parallelism is kept in answer E).

B)mice whose brains grow when they are placed in a stimulating environment or canaries whose neurons increase when they ... mice themselves cannot be the example of neurogenesis; moreover the prepositional phrase "when they are placed ..." ambiguously refers to mice. The same fallacy pertains to "canaries whose neurons increase when they..."

C)mice's brains that grow when they are placed in a stimulating environment or canaries' neurons that increase when they ... the meaning of the sentence is no sensical, since neither the brains nor the neurons can be the subjects of the two clause. Indeed, neurons cannot learn new songs.

D)the brain growth in mice when placed in a stimulating environment or the increase in canaries' neurons when they ... not parallel construction, moreover they cannot refers to neurons because the reasons explained in D)

E)brain growth in mice that are placed in a stimulating environment or an increase in neurons in canaries that ... this is the CORRECT answer, since the meaning and parallelism are preserved.
