You are absolutely right, it seems like the essays are not so important this year and they give more weight to the interview. You will just have to find space in the application and resume to include all other stories and accomplishments.

First of all, well done! consider yourself blessed with this choice.
Second, I'm sure you are not the first person who accepted to a school but chooses not to go. I think that if you explain it to them nicely (like you did here) there should not be any problem and they will understand.
