In terms of the practice tests you should definitely be using the GMATPrep tests from the test maker as others have suggested. The 3rd party practice tests won't necessarily be totally off, but the questions are different and the scoring algorithm will be different, so you really can't read too much...

I would also add that it is much harder for companies to write verbal questions that properly mirror the logic and nuances of the real questions than it is to write Quant questions that do so. So while using 3rd party tests is often necessary, the Quant will tend to be more accurate than the Verbal....
