According to me we use "Whereas" (Limited to TWO) within sentences to contrast two ideas, and "Compared" (Could be N numbers) is use to find the similarities or differences between two or more.

In the last para you mentioned; if it rains today, then probability for tomorrow = 40 - 10 = 30%
Don't you think it should be 40 + 10 = 50% (as statement2 in question says increase of 10% if it rains today)

As we know only water evaporates, then the weight of non-water substance in grapes and raisins is the same. Thus 0.08*{weight of grapes}=0.8*{weight of raisins} --> 0.08x = 0.8*10 --> x = 100.
