Based on the information you provided I don't think your profile is strong enough for UCLA. It's not your GMAT per se -- I've helped clients with 640s gain admission to schools like Cornell and Chicago -- it's the combination of your GMAT, GPA, low work experience, and apparent lack of extracurricular leadership (at least you didn't mention any). You are starting to show good leadership in your professional life, but I think you should wait a year or two to improve that profile, extend your leadership to your extracurricular life, raise the GMAT score, and build an alternate transcript. If you really must apply now then UCI is your best best followed closely by UC Davis, but both will be longshots.

You do seem to have a solid and interesting background. For UCLA, however, a 640 will not be a competitive score. To protect your privacy, you may want to avoid posting your full resume on this forum.

In your opinion, how high do you think I have to get in order to be considered by UCLA? Because i'm willing to take the GMAT again, and i think I can score higher than 640.

You need to get closer to a 680 for UCLA. (The lower edge of their middle 80% is 680, so only 10% of their class is lower than that, and you are not an underrepresented minority). I do not consider USC, UCI, or UCDavis to be reaches for you, although, for UCD your GMAT is also below their middle 80%, though just below. So do your best to raise it ...
