    The rest of the information will be given to the class tomorrow.

    IS "rest" the subject or is "information" the subject.

    The first thing you should do is write them a letter.
    subject : thing or you

    For this one its 'rest of the information' - this phrase acts as the subject.

    For this one 'The first thing you should do' is the subject. The entire clause acts as the subject.

    To identify the subjects first find the main verb. Subjects can be nouns, phrases or even an entire clauses as you had posted in the examples. Identify the verb and find out who or what does the action, it will give you the subject. In the second sentence the main verb is write and what does it - The first thing you should do - does it, so that is the subject. The entire clause has a separate subject and verb as well.
