I get confused on whether to use "Like" or "As" which is so common on GMAT>

Like is used to compare nouns
As is used to make comparisons between clauses
Like compares similarities-if you go to the market you will see vegetables like cucumbers and squash.(you will not necessarily see those specific vegetables just ones like them)
As gives specific examples-if you go to the market you will see vegetables such as cucumbers and squash(those will definitely be there)
