Unlike other arachnids, which have their nerve cells evenly distributed along their bodies, the scorpion nerve cells are clustered in its head, like a mammal's.
(A) bodies, the scorpion nerve cells are clustered in its head, like a mammal's
(B) bodies, the scorpion's head had a cluster of nerve cells, as a mammal does
(C) body, the scorpion has a cluster of nerve cells in its head, as a mammal does
(D) body, nerve cells are clustered in the scorpion's head, like a mammal's
(E) body, a cluster of nerve cells is in the scorpion's head, like a mammal's

can someone explain "their bodies" and "their body"?

you have to make proper comparison
Unlike other arachnids.......the scorpion has
The comparison is between arachnids and scorpion and only option C correctly states that.

but isn't 'as a mammal does' wrong, because as is used to compare actions, not nouns or objects.

if this is from the 1000 sets then this could easily be a worthless question.

In the question statement we are suppose to use "their body" because each arachnid has a single body, not the many bodies.

Example:

1. They write on their notebook. (Means each of them write on his particular one notebook).
2. They write on their notebooks. (Means each of them write on one or more of his notebooks).

I am not sure here about the usage of "AS". May be in case of comparing possession we may have to use word "AS" instead of "LIKE".

However, there is another reason to choose option (C) instead of any other option.

Unlike other arachnids, which have their nerve cells evenly distributed along their bodies, the scorpion nerve cells are clustered in its head, like a mammal's.

Because in the original sentence, arachnids come under non-underlined part, so to maintain continuity, we have to use Scorpion and Mammals. This feature only provides by option (C).

Hence choose (C).
