How many mistakes [in verbal & Quants] one can make and still reach 750+

That's an interesting question but I don't know that there is a single right answer. Remember that the GMAT is now an adaptive test that adjusts the level of difficulty to how you are doiing. My experience as both a teacher and a test taker is that it is simply impossible to gauge how well you are doing on an adaptive standardized test.

Using my own experience as an example, I almost declined to report my scores on an adaptive test b/c I thought I had bombed the verbal, usually a strength: my score was in the 99th percentile.

Another issue with the adaptive tests is that, as the questions get harder, you don't always know when you are getting questions right and wrong. AND, making things even trickier, it is very difficult to gauge difficulty to try and determine if the questions are getting harder or easier.

So...all in all...do your best and don't waste time and energy trying to monitor your score. It really doesn't work and keeps you from what you should be focused on: the clean execution that will get you a good score.
